>Michel Roux Junior’s Perfect Potato Bake

>Found this in one of my foodie mags the other day and tried it on Wednesday. It’s absolutely gorgeous and can be made slightly healthier by using low fat creme fraiche rather than full fat.


6 large potatoes peeled
250ml creme fraiche
1 clove garlic, crushed
20 slices chorizo sausage
Salt & freshly ground black pepper
60g mature cheddar, grated

1. Slice the potatoes and boil until tender, but not fully cooked. Drain.

2. Place the potatoes in a bowl with the creme fraiche, chorizo and garlic. Fold gently then season.

3. Layer the mixture in an oven proof dish and bake at 180C/gas 4 for 15 mins.

4. Sprinkle over the cheese and cook for a further 10 mins.

5. Enjoy!
